It’s Only Wednesday

Yesterday I woke up with a migraine that felt like I was trying to give birth through my right eye. It was…unpleasant. And the rest of the day was equally as lovely. I’d accomplished so much on Monday that I was convinced this week I’d get my Super Wife/Mama/Bam cape and fly through the rest of the days like a super star. Now I’m wondering if I’m going to manage to make a pot of coffee (and at 5:05 a.m. I need it)! It’s only Wednesday!

World Frog Day

Everyone is all excited about today being the International Day of Happiness. When I woke up this morning I’d already been bombarded by posts on every social media platform about being happy. Don’t get me wrong. I’m all for happiness. Happiness is a good thing and we should all strive to make others happy and be happy ourselves. But aren’t we forgetting something? Today is also (and more importantly) World Frog Day!

The idea of having New Year’s resolutions has always evaded me. Perhaps it’s because, in my wild youth, I actually tried making them and failed miserably. But I think, more than my failure at keeping past resolutions, it’s that the very premise of resolutions made at the beginning of the year seems destined to create failure. This time of year having a few easy appetizer recipes in the back of your mind can be a good thing. Whether it is a house full of teenagers, someone dropping by near dinner time unexpectedly or those last-minute party invitations having the makings for easy appetizers is always a good idea.

These are hearty bite and would also be great for a Super Bowl party or a teen sleepover.

Verdict:

These were yummy and so easy to make! Within 30 minutes they were on the table and if you have your meatballs cooked ahead of time and stored in the refrigerator it would be 10 minutes!

  • 1 large baguette sliced into 1/4 ” slices

Oh Hi!

I am in a strange stage of life. It’s a stage that I cannot define. And in twenty-two years of life I have never experienced anything like this.

Ya know, like first, you are surrounded by a bunch of other drippy-nosed rugrats in kindergarten. Next comes grade school that begins the continual climb to the envied Senior year of high school. (We won’t discuss the middle school years; we all know the horror.) Then comes college where you pursue a degree in your dream job and then swiftly as college comes it goes leaving you with that beloved job. Right? Apparently not, at least not for me; at least not at this moment.

I pursued my degree in nursing for four strenuous, formative, fantastic years. Oh, how I loathed it, but, oh, how I loved it even more. The hours of ceaseless studying, tears, lack of sleep, the criticism of crotchety nurses, being cursed at by hurting patients…
