Our youngest grandson spent a long weekend with us so I wanted to make something special. He’s 4 years old so anything different, especially if it’s brightly colored appeals to him. For our dinner the first night I made Chicken Strips with Neon Pasta.

It’s been a while since I’ve written about some of the great blogs I’ve found. Lately I’ve fallen behind on my favorite blogs but you could find some new favorites yourself! So check out Blogs You Should Check Out 7!
Edible Landscaping
When we still owned our farm we not only had an amazing garden and livestock but an abundance of wild edible plants growing on the land. Since my spinal cord injury the idea of wrestling a 130 lb. lamb makes me cringe but I still want to use the land we have to expand the sources of food I grow. And edible landscaping can be very attractive.
Simple Slow Cooker Pot Roast
A funny thing happened that made me decide to make my Simple Slow Cooker Pot Roast for dinner. Andi had loaned me her DVDs for “Desperate Housewives.” I’d never watched it and Andi was sure I’d find it funny. I did but a couple of lines in the series made Mr. C snicker. He didn’t laugh. He snickered. And it was then that I knew I needed to make Simple Slow Cooker Pot Roast.
Bowtie Pasta & Ham with Cream Sauce
Having an empty nest allows me to cook food that may be too spicy or exotic for kids. But Pete and Andi’s youngest daughter comes for dinner frequently and I sometimes I like to make meals geared specifically to the taste of an 8 year old child when she eats here. Tonight Estrella will be having dinner with us so I’m making Bowtie Pasta & Ham with Cream Sauce.
Make Meals Healthier with Herbs
Herbs grow in my garden in summer and on my windowsills in winter. I can’t imagine cooking without herbs. From the delicately flavored to the really robust, herbs can elevate a dish from the everyday to the sublime. But it’s not just taste that you should consider when deciding to use herbs. Learn a few of the favorite herbs I use to make meals healthier with herbs.

Gratin dauphinoise
The traditional regional French dish based on potatoes and crème fraiche which originated in the historic Dauphine region in south-eastern France is the inspiration for my version of Gratin dauphinoise.
Caramelized Broccoli with Mushrooms
Ever since I was a little girl I’ve loved broccoli. Yep. I was that strange vegetable loving child you’ve heard about. Now that I’m grown I still love broccoli but I like to serve it differently. Caramelized Broccoli with Mushrooms is a great way to get the broccoli I love with even more flavor!

Slow Cooker Shredded Beef Tacos
Tacos made with ground beef are good but Slow Cooker Shredded Beef Tacos are the best! The meat is tender and the seasonings give it a spicy kick. Topped with crispy lettuce, tomatoes, cheese, and sour cream it’s a Mexican meal that will have you saying “Delicioso!”

Honey Sriracha Chicken
If you’re in the mood for sweet and spicy chicken you can’t go wrong with Honey Sriracha Chicken! It’s sweet but with plenty of heat. It’s a way for me to serve food that’s reminiscent of Thai food without going too hot.
