Mama’s Meatloaf

Mama made meatloaf in what I have come to discover is a very nontraditional way. But I love Mama’s Meatloaf and still make it her way to this day. It’s great hot out of the oven and we always save some to make cold sandwiches the next day.

  1. Mama and Granny always added onions, and peppers. The celery is new. I’ll have to try that next time. I can’t imagine it without bread either. It does hold it together so it’s not falling apart but it also adds a little bit of a different flavor as well. I was short on bread once and made it without the bread, not only did it crumbled all up(didn’t like that) but also didn’t taste the same.

    1. I know what you mean about the bread. And if you like celery it really does add flavor. Even with the kids gone I make a really big one so we can have sandwiches the next day (or later that night). That’s why I usually use oatmeal instead of bread.

  2. My mother makes her similarly. Breadcrumbs, onion, peppers… I always loved it ❤ My husband was 100% anti-loaf, so I had to come up with our own version. I use vegetables, but I process them into slush (because visible vegetables are "an affront to meatloaf") along with ketchup, worcestersire sauce, a tiny blob of mustard, and some garlic. It looks disgusting, but it turns out yummy. After baking, it gets sliced and then pan fried so the exterior has a nice crisp. Always served with mashed potatoes and green peas! We're a split family on ketchup vs gravy.

    My mom uses oatmeal and bread crumbs in hers too! I don’t remember about the peppers and onions, but I am pretty sure she uses onions. I’ll have to try it with celery! 🙂

    Haha, we always put ketchup on it for some reason. Also, I have never heard of a meatloaf sandwich. I’ll have to try that!
