When I decided to make Mexi-ranch Strombolis for dinner I thought homemade Mexican rice would be a good side dish. It’s much easier than it sounds and you can adjust the seasonings to make it hotter if you like.

Yep, I broke the cardinal rule and didn’t eat before reading your post, now I’m HUNGRY. I love rice dishes and this seems like you can do lots with it. Wraps, add some meat, very versatile.

LOL We talked about this, Margaret. Eat then read. I’m going to post the Mexi-ranch strombolis tomorrow.

I know, I know. I’ve been doing good until today. The strombolis sound like they will be good too. But then again what do you post that isn’t good.

LOL You’re so good for me. I know there are far better cooks I follow here but I try.

I hope so 🙂 What you cook is great and I have the ingredients. I love lots of recipes I see but I’d have to go to the store and buy some things that I would only use for that recipe, or there are too many ingredients, so a whole list of things. Spend all day prepping, sometimes overnight, and you know I get distracted LOL. Yours I can make and I know they are good.

Thank you, Margaret. With our finances I’m not going to start making lobster with 82 ingredients that have to be flown in from Paris. LOL A lot of my cooking is food pantry based!

And I appreciate that. Yours are versatile too so if I don’t have the exact thing your recipe calls for, there is something I can substitute until I can get what you have in yours.

We really like it and I usually make a big batch and freeze some for the days when pain means I can’t really cook.

I’m so sorry about your pain. Great idea to freeze food though 🙂

Thank you, Shannon. It sounds odd to say I’m used to the pain but, in a way I am. I’ve learned to adapt. Most of the time I just go right on doing what I want in spite of it. I make freezer meals whenever I can. That way if I’m in too much pain or had too busy of a day I can make a good dinner with very little effort. I’m in to very little effort! lol
