mmmmmm and I’m with you, you can use less cheese but why would you. I’m a “it calls for 3 cups of cheese, let me throw another handful in there” type of girl 😉

I think Mr. C would think I dished up the rest of the cheese on my plate. He’d never believe I only put 1 cup. It would start a battle. I know it.

Funny story… the grocery store I go to likes to put the veggies and fruits into “reduced for quick sale” bags when they feel that it’s going to go bad before it sells, and sell the very cheap. (No, that’s not the funny part, keep reading.) They had one bag that had three limes in there along with grapefruits, apples, and oranges, and I am a huge fan of citrus fruits and have been craving fresh-squeezed limeade so I got that one. The only thing was, there was this lonely zucchini in there and I had no idea what I was going to do with it. And then before I could find a zucchini recipe, I checked your blog, and found this recipe. Suddenly, I knew exactly what I was going to do with it. 😂 To make this even better, my mom accidentally bought a can of sliced tomatoes without green chilies a few weeks ago, and we weren’t sure what to do with it. It was as if this recipe solved everything!
And boy, was it amazing. 😍 I happily ate on leftovers for days. The only thing we did differently was we boiled the chicken (I had to get the chicken broth somewhere!) and I skipped frying and went straight into the oven with it, since the chicken was already done. And I added Pepper Jack cheese to the Mozzarella because I like the extra heat.
