Our oldest son, Paul has lived in Indiana for over a decade. While I’m not thrilled with having him and his family so far away I have discovered some great food down there! One dish I would never have thought of on my own is the Hoosier Pork Sandwich! This is a delicious, enormous sandwich that is an Indiana tradition.

Being a Hoosier myself I recognized exactly where this post was going! Though your recipe varies somewhat from the traditional tenderloins, your still look great! We were just at a fish fry last weekend. Most fish fries offer fish or chicken. Ours was fish or tenderloins! I think the tenderloins were as popular as the fish-if not more so!

I used pork tenderloin but I think I may have cut it wrong. Bless Nick for inventing this sandwich! And bless all you Hoosiers for keeping it alive!!
