Keeping meatballs in the freezer is something I have done for years. Whether they’re Italian, Greek, Swedish, or plain they always come in handy. One variety I haven’t made in a while is Parmesan meatballs. It’s crazy not to have these on hand! They are great for spaghetti and meatballs or for my favorite Parmesan meatball subs!

Spicy Steak Quesadillas
Sometimes Mr. Comfortable asks for something specific for dinner and, if it’s possible to make it, I do. A menu plan is great but you have to leave room for adjustments. Recently Mr. C asked if I would make some Spicy Steak Quesadillas and I was happy to oblige. But I had to use what I had on hand so this isn’t a fancy recipe.

Three Cheese Baked Penne
Lately I haven’t made any freezer meals and I really do miss having some for those days when I just can’t cook. But I have an easy recipe that will feed us one the night I make it and provide a freezer meal for the future. Three Cheese Baked Penne is like a bonus meal since I get two dinners and only cook once!

Mama’s Guinness Irish Stew
In 1725 Arthur Guinness was born in County Kildare, Ireland. With £100 he inherited from his godfather Arthur started a small ale brewery in 1752. And in 1759 he moved to Dublin and signed a 9,000 year lease on a rather dilapidated and ill-equipped brewery. I’m so glad he did because 258 years later I can make Mama’s Guinness Irish Stew!

Cowboy Skillet Meal
Recipes that are delicious, inexpensive, and don’t create a sink full of dishes are high up on my list of “must makes.” Cowboy Skillet Meal is one of those meals. Everything, including the noodles cooks in one skillet! And if you have leftovers it’s even better the second day!

Pan-seared Delmonico Steak
We don’t have steak very often. But when I get my hands on a thick steak I’m in red meat heaven! I don’t like to mask the flavor of the meat with a lot of seasoning. When Mr. C got a really thick Delmonico steak I just had to prepare it simply! I made Pan-seared Delmonico Steak and the result was wonderful!

Mennonite Salisbury Steak
When we lived in Illinois we attended a church that was an off-shoot of the Mennonites. Every Sunday there was a community meal served after the service. It was there that I collected so many wonderful recipes from the Mennonites and also from the Amish folk. Mennonite Salisbury Steak is a simple, comforting meal you’ll love.
