My very dear friend, Peg is coming for dinner and I’m going to serve chicken. That may seem like a kind of cheap and commonplace dinner to serve to a close friend but I’m making this chicken in a way I know Peg will love. I usually call Peg my Guinea Peg because I like to try out recipes on that poor woman but I’ve already tested this recipe and all I can say is I have no problem serving it to people I care about! It’s simple but very tasty and since it’s the recipe of a world famous chef I call it Keller Whole Roasted Chicken.

When my boys were kids it seemed that nearly every day there was some activity we had to get to after school and on weekends. Even in summer there was softball, swimming, Scouts, and 4-H. I hated not being able to cook at home and even on nights I did cook at home it was sometimes something from a box. One meal that was quick and that the boys liked was Hamburger Helper. Then I realized I could do my own version and the kids declared it Better than Helper Cheeseburger Macaroni!

Chicken is still an inexpensive option for a great dinner. It’s versatile and can be a delight but certain cooking methods can result in disappointment. If I leave the skin on chicken it’s because I want that nice, crisp skin. Braising chicken infuses it with the flavors in the liquid but can leave the skin soggy. But these Crispy Braised Chicken Thighs give me all the flavor I want and a nice crispy skin, too!

Back in April I posted my recipe for Bam’s Tuesday Casserole (which isn’t really a casserole). I’d been making it the same way since my sons were very little. I really like it, don’t get me wrong. But I thought it was time to make a couple of changes. Get ready for Bam’s Tuesday Casserole Updated.

Everyone I know loves Buffalo chicken wings. They’re always perfect for parties and I’ve made them even when there isn’t a party. I think they’re great! But I don’t always want to have to stand over the fryer to make them. So, when I’m craving Buffalo chicken I make my Buffalo Chicken Stuffed Bread.

I saw a recipe for Salmon Pattie Sliders at This Happy Mommy and, since I’m trying to eat more fish I wanted to try it. Of course I had to add a couple of ingredients because
I didn’t really want to taste the salmon that’s the way I roll. This is my version: Bam’s Salmon Pattie Sliders with Lemon Aioli. If you like salmon I think you’d like either version!

We’re due to get between 8 and 11 inches of snow by midnight with more snow overnight. This makes me long for summer and some fabulous grilled burgers. But firing up the grill in a snowstorm and high winds isn’t on my way up on my list of things I’m willing to do. Instead I’m making Southwest Burger Mac & Cheese.
