Happy 4th of July!

We had a remarkably busy day yesterday. We went to our youngest son’s house for a barbecue so I made my Toffee Cheesecake Cookie Cups. I also planned to make Stuffed Deviled Eggs but my bacon had mysteriously disappeared.

The food my son’s adorable girlfriend made was wonderful and they had something for every taste. They grilled chicken, hot dogs, and brats. There served baked beans, mashed potatoes, and macaroni and cheese. And, as always, Andi had put together a fabulous salad.

But, by the time we got home last night, I was too tired to think! I decided to take today off so all I’ve done is gather some peas and sugar snaps from the garden. I blanched them and they’re in the freezer.

I may or may not make a real dinner tonight. Instead I may just throw something super easy together and get ready to baby poor Remy. He HATES fireworks and folks around here love them! And there are the fireworks in the village tonight which, because of his remarkable hearing, frighten him, too. But cuddling the boys and watching TV is probably all the “adventure” I’m up to tonight!

If you’re going to a barbecue, fireworks, or any other holiday happening, I hope you have a safe, amazing time!

I think how great it would be if I had a dishwasher and two ovens. But, although my home is nothing like the one I sometimes dream of it has charms that no granite countertops could ever match.
