We don’t have steak very often. But when I get my hands on a thick steak I’m in red meat heaven! I don’t like to mask the flavor of the meat with a lot of seasoning. When Mr. C got a really thick Delmonico steak I just had to prepare it simply! I made Pan-seared Delmonico Steak and the result was wonderful!

When I woke up I knew it was going to be a lazy day. The sun was already well up in the sky and when I looked at my clock it was nearly 8 a.m.! I decided instantly to make Slow Cooker Italian Beef Sandwiches. They’re delicious and they don’t take a lot of effort so they were perfect for a take-it-easy kind of day!

Mama made meatloaf in what I have come to discover is a very nontraditional way. But I love Mama’s Meatloaf and still make it her way to this day. It’s great hot out of the oven and we always save some to make cold sandwiches the next day.
Our weird winter weather continued last week with temperatures above normal. Then came the power outage and by Saturday morning the lows were ridiculously low. I’d refused to come out from beneath the blankets while we had no electricity and, therefore, no heat but once the power returned I was really craving a good homemade meal. And, since it was seasonally cold (freezing) it was the perfect night for beef stew!
The last couple of weeks have been really rough on my physically. I think the weather played a large part since it was in the 60’s one day then the 30’s the next and continued to roller-coaster that way. I’ve also had a flare of the CRPS which scares the heck out of me. And the worst part was that I felt so awful I didn’t want to cook and we ate take-out twice! From the time I was a little girl I’ve had a love affair with chicken fried steak. It’s definitely one of my top comfort foods! I love that I can make it as simple or as complex as I like and still have the same “Oh this is yummy” feeling about it. Since Mr. Comfortable and I have been on a spicy food kick lately I decided to make Kicked Up Chicken Fried Steak to satisfy both the comfort food and spicy food cravings!

Mr. C’s sister sent us a gift certificate from Kansas City Steak Company for Christmas. It took me a while to decide what to get since everything in the catalog was very expensive and spending that much money on a small amount of meat was difficult. But, since we had the gift certificate I finally decided to go pretty much all out and bought 16 ounce New York Strip Steaks.

Since fall has officially begun, although today’s temperature is 85°, I decided to start thinking ahead. Halloween will be here before we know it and I was thinking about some fun Halloween party treats. And because I can never follow a straight path in my thinking Halloween treats turned into making Mother Dracula’s Transylvanian Goulash for dinner.

A long time ago, longer than I like to admit, we took a trip to California. On the way we had a really tasty meal in a tiny diner somewhere out west. I can’t even remember which state we were making out way through at the time but I remember that meal! Battered Steak Bites is my take on that dinner.

Tender steak with sweet and spicy teriyaki sauce paired with scallion rice is a total winner of a meal. Although this dish does take a little time and attention it’s worth every minute! You may find you’ve put Beef Teriyaki with Scallion Rice in your regular dinner rotation.
