Chicken Milanesa

Chicken and citrus are great together! I love the way those flavors complement each other. Like Mr. Comfortable and me, they bring out the best in each other! The Panamanian way I make Chicken Milanesa, with its crispy coating and lime flavor is a terrific chicken dish. I incorporate lime juice right into the dish rather than simply serving it with lime slices.

Spicy Sweet Chicken Thighs with Dijon Sauce

We’re at that time of year when the weather is still summery but you know cold weather is just around the corner. It makes me long for June when summer was still stretched out in front of me. I saw a recipe and it reminded me of long, hot summer days. I decided to make Spicy Sweet Chicken Thighs with Dijon Sauce and see how we liked them. I’ve promised to be honest about what I cook and this is one of those meals!

Braised Chicken Thighs Italiano

Braising is an underused way to cook in my opinion. When you braise meats they slowly take on the flavor of the braising liquid without losing their own unique flavor. And the liquid is infused with the flavor of the meat. It’s a win-win! Braised Chicken Thighs Italiano is one of our favorite ways to have chicken thighs because the flavors combine and create something wonderful!

Creamy Chicken Roasted Red Pepper Rotini

My kids tease me that most of my recipes start with “Soften 12 pounds of butter and 8 pounds of cream cheese.” It’s true that I don’t do a lot of super low calorie cooking. In my defense I’m still trying to put weight on Mr. Comfortable so gravy as a beverage is still on the menu! But my Creamy Chicken Roasted Red Pepper Rotini has just enough creamy sauce to make it delicious without being too heavy!

Hasselback Mexi-ranch Chicken

Lately I’ve seen a lot of recipes for Hasselback potatoes around the Internet. They intrigued me, not because the ingredients are so unusual but because of the way the potatoes are sliced. I struggle with presentation and those potatoes look really cool. But I didn’t want to do potatoes. I wanted to start with something different. So I came up with Hasselback Mexi-ranch Chicken!

BLT Chicken Cordon Bleu

Recently I made my Simple Woman’s Chicken Cordon Bleu. This seems to have made Mr. Comfortable start thinking and he requested I come up with a BLT version of the dish. I’m not going to tell him but creating BLT Chicken Cordon Bleu was an easy task!

Simple Woman’s Chicken Cordon Bleu

Every once in a while I want to make something really special for dinner. But I’m a simple woman. So I created Simple Woman’s Chicken Cordon Bleu as one of the dishes I turn to on those occasions. It’s sumptuous, delicious, and still inexpensive and easy enough for me to make.
