Braising is an underused way to cook in my opinion. When you braise meats they slowly take on the flavor of the braising liquid without losing their own unique flavor. And the liquid is infused with the flavor of the meat. It’s a win-win! Creamy Chicken Roasted Red Pepper Rotini

My kids tease me that most of my recipes start with “Soften 12 pounds of butter and 8 pounds of cream cheese.” It’s true that I don’t do a lot of super low calorie cooking. In my defense I’m still trying to put weight on Mr. Comfortable so gravy as a beverage is still on the menu! But my Creamy Chicken Roasted Red Pepper Rotini has just enough creamy sauce to make it delicious without being too heavy!

Andi’s Tropical Crunch Chicken

Our son’s girlfriend decided to make us dinner last night. She and our son were stopping by anyway and, after the tomato sauce debacle, she knew I wasn’t able to do much. I felt guilty as she lugged in bags of ingredients but, once I tasted her chicken strips, I got over it. They were wonderfully crunchy and the coconut and orange flavors made her dish like a trip to the Caribbean. Since she didn’t have a name for her chicken I dubbed it Andi’s Tropical Crunch Chicken.
