I’ve been keeping busy for the last few days with projects outside of the kitchen. While it’s been kind of nice not to have to devote a lot of time to cooking I miss the meals. So last night I decided to pull my apron back on and make Shrimp & Mushrooms in Lemon Garlic Cream Sauce. It’s a delicious meal full of hearty flavors that will satisfy any “real meal” cravings!

After Jami and John’s wedding I had a really tough time getting out of bed. Even my nails and teeth felt swollen. For a couple of days we survived on what I call fast food; Hamburger Helper and frozen pizza. But we needed a real meal before long so I made something simple but really tasty – Herbed Shrimp with Lemon Orzo and Peas.

I love this rich, flavorful meal. The tomato cream sauce can be used in so many dishes but one of my favorite ways is to combine it with shrimp and fettuccine. It’s my version of comfort food. There’s something comforting about a big plate of pasta when there’s snow on the ground. And today we had plenty of snow! Shrimp and pasta go together wonderfully. By using a variety of sauces you can create dinners that have unique flavors using the shrimp and pasta combination. I love the smoky quality of roasted red peppers so I pulled out a jar of them as the inspiration for my Shrimp with Roasted Red Pepper Parmesan Sauce.

There are days I need a dinner that’s really fast and easy but I still want something satisfying and delicious. Yesterday was one of those days. Between butchering the duck and the cold, wet weather I was barely able to move most of the day. But I was hungry! So I made my Easy Shrimp Scampi with Butter Wine Lemon Sauce. I had dinner ready in the time it took to cook some linguine and the combination of tender shrimp, garlic, green onions, and that silky sauce were just what we needed!
