Our oldest son, Paul has lived in Indiana for over a decade. While I’m not thrilled with having him and his family so far away I have discovered some great food down there! One dish I would never have thought of on my own is the Hoosier Pork Sandwich! This is a delicious, enormous sandwich that is an Indiana tradition.

We’ve been having a late heat wave and it’s really taking a toll on me. I like the hot weather but it’s been in the 90’s every day for about a week and that increased my pain levels exponentially. Even when I swear I’m not going to do a thing all day I usually end up doing a lott. Mr. Comfortable has expressed his unhappiness with this because I only vow to take a day off when my pain level is quite high. If I push it too far I have to take time off because I can’t get out of bed. That ruins the whole idea of a day off since pain doesn’t make for a pleasant break. But I just enjoyed a luxurious lazy day and it didn’t cost me my spoons!

Three Cheese Baked Penne

Lately I haven’t made any freezer meals and I really do miss having some for those days when I just can’t cook. But I have an easy recipe that will feed us one the night I make it and provide a freezer meal for the future. Chicken Milanesa

Chicken and citrus are great together! I love the way those flavors complement each other. Like Mr. Comfortable and me, they bring out the best in each other! The Panamanian way I make Chicken Milanesa, with its crispy coating and lime flavor is a terrific chicken dish. I incorporate lime juice right into the dish rather than simply serving it with lime slices.

Mama’s Guinness Irish Stew

In 1725 Arthur Guinness was born in County Kildare, Ireland. With £100 he inherited from his godfather Arthur started a small ale brewery in 1752. And in 1759 he moved to Dublin and signed a 9,000 year lease on a rather dilapidated and ill-equipped brewery. I’m so glad he did because 258 years later I can make Mama’s Guinness Irish Stew!
